Taco-Stuffed Avocados

A healthy and delicious twist on tacos, using creamy avocados as edible bowls filled with seasoned ground beef, fresh veggies, and melted cheese. Perfect for a low-carb or keto-friendly meal.

  • 2 large ripe avocados
  • 1/2 lb (225g) lean ground beef (or turkey/chicken)
  • 1 tbsp taco seasoning
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded lettuce
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp sour cream (or Greek yogurt)
  • 1 tbsp chopped cilantro
  • 1 tbsp lime juice
  • Salt & pepper to taste
  • Optional: jalapeños, red onion, black beans, corn

Instructions

  1. Prepare the avocados: Cut in half, remove pits, and scoop out a little flesh to create more space for filling.
  2. Cook the meat: Brown ground beef in a skillet over medium heat. Drain excess fat, then add taco seasoning and 2 tbsp water. Simmer for 3-5 minutes.
  3. Assemble: Spoon the taco meat into each avocado half.
  4. Top: Add shredded cheese, tomatoes, lettuce, and a dollop of sour cream.
  5. Garnish: Sprinkle with cilantro, a squeeze of lime juice, and salt & pepper.
  6. Serve immediately while avocados are fresh and cheese is slightly melted.

Notes

  • For a vegetarian version, use black beans or lentils instead of meat.
  • Best eaten fresh—avocados may brown if stored for too long.
  • Spice level can be adjusted with extra jalapeños or hot sauce.
