Taco Stuffed Peppers are a delightful fusion of flavors, combining classic Tex-Mex taco filling and vibrant bell peppers for a hearty, comforting meal.

  • 3 large bell peppers (any color)
  • 1 pound ground turkey
  • 2 tbsp taco seasoning
  • 1 15-ounce can black beans (drained)
  • 1 10-ounce can Rotel tomatoes with green chilies (drained)
  • 2 cups shredded Mexican cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Prep the peppers by lightly oiling a baking dish, washing them, and slicing them in half lengthwise.
  3. Bake the peppers cut-side up for 10 minutes until slightly tender.
  4. Drain any liquid that pooled inside the pepper halves.
  5. Cook the filling by browning the ground turkey in a skillet for 5-10 minutes.
  6. Add the taco seasoning, black beans, and tomatoes; simmer for 2-3 minutes.
  7. Stuff the pepper halves evenly with the meat mixture.
  8. Add shredded cheese on top of each pepper.
  9. Final bake for another 15 minutes until the cheese is melted and bubbly.
  10. Serve hot with favorite toppings.
