Teriyaki Beef Lettuce Wraps are a light, flavorful, and low-carb meal featuring seasoned ground beef cooked in a homemade teriyaki sauce, served in crisp lettuce cups. Perfect for a quick and healthy dinner or appetizer.

Ingredients

– 1/2 cup Low-Sodium Soy Sauce or Tamari

– 1/4 cup Water

– 3 Tablespoons Honey or Maple Syrup

– 2 Tablespoons Rice Vinegar

– 1 Tablespoon Toasted Sesame Oil

– 2-3 Cloves Garlic, Minced

– 1 Tablespoon Fresh Ginger, Grated

– 1 Tablespoon Cornstarch

– 1 Tablespoon Avocado Oil or other neutral oil

– 1.5 lbs Lean Ground Beef (90/10 or 93/7)

– 1 Medium Yellow Onion, Finely Diced

– 8 oz Can Water Chestnuts, Drained and Finely Diced

– 2 Green Onions, Thinly Sliced (white and green parts separated)

– 1-2 Heads of Lettuce (Butter, Iceberg, or Romaine)

– Shredded Carrots

– Toasted Sesame Seeds

– Additional Sliced Green Onions

– Optional: Finely Diced Red Bell Pepper, Cilantro, or Sriracha

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  2. Add minced garlic and grated ginger, and cook for 1 minute until fragrant.
  3. In a small bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar, and sesame oil.
  4. Pour the sauce over the beef and stir to combine. Bring to a simmer.
  5. Add the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.
  6. Spoon the teriyaki beef into lettuce cups.
  7. Garnish with sliced green onions, sesame seeds, and shredded carrots if desired.
  8. Serve immediately.

Notes

  • For a healthier option, use ground turkey or chicken instead of beef.
  • Adjust the sweetness by adding more or less honey to taste.
  • Serve with steamed rice for a more filling meal.
