A quick and easy recipe for flavorful Teriyaki Glazed Chicken Bites, perfect for family dinners and gatherings.

  • 2 lbs Boneless, Skinless Chicken Breasts
  • 1/4 cup Cornstarch
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Salt
  • 2 tablespoons Olive Oil or Avocado Oil
  • 1/2 cup Low-Sodium Soy Sauce
  • 1/4 cup Water
  • 1/4 cup Mirin
  • 3 tablespoons Brown Sugar
  • 2 cloves Garlic, Minced
  • 1 tablespoon Fresh Ginger, Grated
  • 1 tablespoon Cornstarch + 2 tablespoons Cold Water (Cornstarch Slurry)
  • 1 tablespoon Toasted Sesame Seeds
  • 2 Green Onions, Thinly Sliced

Instructions

  1. Cube the chicken into bite-sized pieces and pat dry.
  2. Coat chicken with a mixture of cornstarch, salt, and black pepper.
  3. Heat olive or avocado oil in a skillet over medium-high heat.
  4. Add chicken and cook for 3-4 minutes per side until golden brown.
  5. Remove chicken, leaving bits in the skillet.
  6. Sauté garlic and ginger in the skillet until fragrant.
  7. Whisk together soy sauce, water, mirin, and brown sugar and add to skillet.
  8. Mix cornstarch with cold water and add to the sauce, stirring continuously until thickened.
  9. Toss cooked chicken back in the sauce and combine.
  10. Garnish with toasted sesame seeds and green onions before serving.

Notes

For enhanced flavor, marinate chicken in the soy sauce and cornstarch mixture beforehand.
