Thanksgiving Pumpkin Pie Cookies

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup pumpkin pie filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 3-4 minutes.
  3. Mix in the vanilla extract and salt until fully incorporated.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Roll the dough into balls about 1 inch in diameter and place them on a baking sheet lined with parchment paper. Press down to create a shell shape.
  6. Make a small indentation in the center of each cookie and fill it with pumpkin pie filling.
  7. Bake for 12-15 minutes until the edges are lightly golden.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
