  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup almond flour
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, followed by the almond and vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  9. Dust with powdered sugar before serving.

Notes

Store in an airtight container at room temperature for up to a week. The dough can be prepared in advance and refrigerated for up to 3 days.
