Savory Turkey Cauliflower Meatloaf

A healthier take on the classic meatloaf, featuring lean ground turkey and roasted cauliflower for a moist and flavorful dish.

  • 2 cups cooked cauliflower (mashed)
  • 1/2 onion (diced)
  • 1 cup mushrooms (diced)
  • 2 large eggs (lightly beaten)
  • 1 tbsp parsley (chopped or dried)
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1.5 lb lean ground turkey
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • 2 tbsp brown sugar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly coat a 9” loaf pan with cooking spray.
  3. Whisk together the glaze ingredients (ketchup, mustard, and brown sugar) in a bowl and set aside.
  4. Combine all ingredients in a large bowl: cooked cauliflower, diced onion, mushrooms, eggs, parsley, Worcestershire sauce, basil, salt, pepper, and ground turkey. Mix gently until just combined.
  5. Spread the meat mixture evenly in the prepared pan.
  6. Bake in the center of the oven for 45 minutes.
  7. Remove from the oven, draining off any liquid that has accumulated on top, and coat the top with the glaze.
  8. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
  9. Remove from the oven and allow the meatloaf to rest for 10 minutes before slicing and serving.

Notes

This dish can be prepared ahead of time and refrigerated before baking. It’s also freezer-friendly for up to 2 months.
