A vibrant and hearty Steak Burrito Bowl filled with juicy marinated steak, fluffy rice, and fresh toppings, perfect for a quick dinner or meal prep.

Ingredients

Scale
  • 1 lb marinated steak (flank or skirt steak recommended)
  • 2 cups cooked rice (white or brown)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup corn (frozen or canned, drained)
  • 1 cup black beans (rinsed and drained)
  • 1 bell pepper, diced (red, yellow, or green)
  • 1 avocado, sliced
  • 1/2 cup salsa (homemade or store-bought)
  • 1/2 cup guacamole
  • Salt and pepper to taste
  • Chopped cilantro (optional)

Instructions

  1. Cook the Marinated Steak: Heat a skillet over medium-high heat and add the marinated steak. Cook for about 5-7 minutes or until it reaches your desired doneness, flipping once.
  2. Prepare the Rice Base: Layer your cooked rice in a large bowl as the base.
  3. Slice the Cooked Steak: Let the steak rest for 5 minutes before slicing it against the grain.
  4. Top It Off: Pile diced tomatoes, corn, black beans, bell pepper, avocado, salsa, and guacamole over the rice.
  5. Season: Sprinkle salt and pepper to taste and add chopped cilantro if desired.
  6. Serve Immediately or Store for Later: Enjoy immediately or store in meal prep containers.

Notes

For meal prep, store components separately to keep ingredients fresh. Marinating the steak ahead of time can enhance tenderness.
