A healthier twist on a classic comfort food, this Vegan Blueberry French Toast Casserole is perfect for brunch and packed with delightful flavors.

  • 2 cups almond milk (or any plant-based milk)
  • 1 cup fresh blueberries
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, whisk together the almond milk, maple syrup, almond butter, vanilla extract, cinnamon, chia seeds, and salt until well mixed.
  3. Add the cubed bread and blueberries; stir gently until the bread is well coated.
  4. Pour the mixture into the baking dish, spreading it evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and the casserole is set.

Notes
