Vegan Buffalo Chickpea Salad Sandwich

A healthy and delicious twist on the classic buffalo chicken sandwich, made with creamy chickpeas and zesty hot sauce.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons hot sauce
  • 1 tablespoon lime juice
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • Salt and pepper to taste
  • Whole grain or gluten-free bread
  • Lettuce or greens for serving

Instructions

  1. Mash the chickpeas in a mixing bowl until slightly chunky.
  2. Stir in vegan mayonnaise, hot sauce, lime juice, celery, and red onion until evenly coated.
  3. Add salt and pepper to taste.
  4. Toast the bread if desired.
  5. Spread the chickpea mixture onto one slice of bread and top with fresh greens.
  6. Assemble with another slice of bread and cut in half to serve.

Notes

Ensure mayo is at room temperature for easy mixing. For added crunch, don’t skip toasting the bread.
