Vegan Pumpkin Spice Tiramisu

A delightful vegan twist on the classic Italian tiramisu, infused with the rich flavors of pumpkin spice, perfect for fall gatherings.

  • 1 cup pumpkin puree
  • 1 cup vegan mascarpone cheese
  • 1 cup whipped cream
  • 1 cup vegan ladyfingers
  • 1 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1/4 cup sugar (or sweetener of choice)
  • Cocoa powder for dusting

Instructions

  1. In a large mixing bowl, combine the pumpkin puree, mascarpone cheese, whipped cream, vanilla extract, sugar, and pumpkin spice. Mix until smooth and creamy, about 2-3 minutes.
  2. Pour cooled coffee into a shallow dish. Briefly dip each ladyfinger into the coffee for about 1-2 seconds per side.
  3. Layer the bottom of a serving dish with the dipped ladyfingers.
  4. Spread half of the pumpkin mascarpone mixture over the ladyfingers.
  5. Add another layer of dipped ladyfingers followed by the rest of the pumpkin mascarpone mixture.
  6. Cover the dish with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
  7. Before serving, dust the top with cocoa powder.

Notes

Ensure vegan mascarpone and whipped cream are at room temperature for easy mixing. Store leftovers in the fridge for up to 3 days.
