Hearty and Delicious Vegetable Orzo Soup

  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped spinach
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat for 2-3 minutes.
  2. Add the chopped onion, carrots, and celery; sauté for 5-7 minutes until softened.
  3. Stir in minced garlic and oregano, cooking for an additional minute.
  4. Pour in the vegetable broth and bring to a boil, then reduce heat to medium-low.
  5. Add the orzo and diced tomatoes to the simmering broth. Cook for about 10 minutes, stirring occasionally.
  6. Stir in the chopped spinach and let it wilt for 2 minutes; season with salt and pepper.
  7. Ladle the soup into bowls and enjoy hot.

Notes

This soup gets better overnight as flavors meld. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
