225 pounds ground beef (Note: A leaner option, such as ground turkey, can be used for a healthier version)
1 8-ounce block cream cheese, softened (I recommend Philadelphia for its creaminess)
1 16-ounce block Velveeta cheese, cubed (Use the original kind for the best flavour)
12 ounces bowtie pasta (Feel free to substitute with other pasta shapes)
1 cup milk (Whole milk or buttermilk works great here)
Salt and pepper to taste
Instructions
Cook pasta according to package directions. Drain and set aside.
In large skillet, brown ground beef over medium heat. Drain excess fat.
Add onion, bell pepper, and garlic. Cook 5 minutes until softened.
Stir in diced tomatoes with chilies, Velveeta, milk, and seasonings. Cook over low heat, stirring frequently, until cheese is fully melted (about 5 minutes).
Add cooked pasta to skillet, tossing to coat evenly with cheese sauce.
Garnish with fresh herbs and serve immediately.
Notes
For extra creaminess, reserve 1/2 cup pasta water to thin sauce if needed
Add 1 cup frozen corn for more color and texture
Substitute ground turkey and add 1 tbsp olive oil if needed
Leftovers reheat well with a splash of milk to refresh the sauce
