  • 1 lb pork shoulder or loin
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp sugar
  • 3 cloves garlic, minced
  • 2 shallots, minced
  • 1 cucumber, sliced
  • 2 carrots, julienned
  • 1 cup bean sprouts
  • 1/2 cup fresh mint, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup crushed peanuts for garnish
  • Chili sauce (optional)

Instructions

  1. Marinate the pork by combining soy sauce, fish sauce, sugar, garlic, and shallots. Coat the pork and let it marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the pork for about 4-5 minutes per side until fully cooked. Let it rest before slicing.
  4. Cook the rice vermicelli noodles according to package instructions, then drain and rinse with cold water.
  5. Prepare the vegetables by slicing the cucumber and julienning the carrots.
  6. Assemble the bowls with rice noodles, sliced pork, vegetables, and herbs.
  7. Drizzle with a sauce made of fish sauce, sugar, lime juice, and optional chili sauce. Add crushed peanuts on top.
  8. Serve immediately and enjoy!
