Waffle and Sausage Casserole

A delicious breakfast casserole that layers crispy waffles, savory sausage, and a rich egg custard, baked to golden perfection. This crowd-pleasing dish is perfect for weekend brunches or holiday mornings!

  • 8 frozen waffles (or 6 homemade), cut into 1-inch pieces
  • 1 lb breakfast sausage, cooked and crumbled
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 2 tbsp chopped fresh chives (optional)
  • Additional maple syrup for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Spread waffle pieces evenly in the prepared baking dish. Top with cooked sausage.
  3. In a large bowl, whisk together eggs, milk, cream, maple syrup, vanilla, salt, and pepper.
  4. Pour egg mixture evenly over waffles and sausage. Press down lightly to ensure all waffle pieces are soaked.
  5. Sprinkle cheese evenly over the top.
  6. Bake for 35-45 minutes, until golden brown and set in the center.
  7. Let stand 5 minutes before serving. Garnish with chives if desired.
  8. Serve warm with additional maple syrup.
