  • 1 cup red seedless grapes, halved
  • 1 large apple (Fuji or Honeycrisp), diced
  • 1/2 cup celery, finely chopped
  • 1/3 cup walnuts, toasted and chopped
  • 1/4 cup dried cranberries (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or to taste)
  • Salt and black pepper to taste
  • Optional: 1/4 teaspoon celery seed

Instructions

  1. Toast walnuts: In a dry skillet over medium heat, toast walnuts for 3-4 minutes until fragrant. Let cool, then chop.
  2. Prep ingredients: Dice chicken, halve grapes, chop apple and celery, and mince parsley.
  3. Make dressing: In a small bowl, whisk together mayonnaise, yogurt, lemon juice, Dijon mustard, honey, salt, pepper, and celery seed (if using).
  4. Combine: In a large bowl, mix chicken, grapes, apple, celery, walnuts, cranberries (if using), and parsley.
  5. Toss with dressing: Pour dressing over salad and gently stir until evenly coated.
  6. Chill: Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  7. Serve: Enjoy on croissants, lettuce wraps, or over a bed of mixed greens.
