Instructions

  1. Mash the drained navy beans in a mixing bowl until smooth but slightly chunky for texture, about 2-3 minutes.
  2. Stir in vegan mayo, Dijon mustard, lemon juice, minced garlic, and season with salt and pepper, blending until creamy, about 1-2 minutes.
  3. Fold in fresh herbs of choice.
  4. Toast bread slices until golden brown, approximately 3-4 minutes on a hot pan.
