Irresistibly Moist Yogurt Banana Bread

A delightful take on classic banana bread with added yogurt for moisture and flavor.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup plain yogurt
  • 1/4 cup melted butter or oil
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine mashed bananas, yogurt, melted butter or oil, sugar, egg, and vanilla extract. Blend until smooth and creamy.
  3. In another bowl, whisk together flour, baking soda, and salt.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in walnuts or chocolate chips if desired.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a vegan version, substitute the egg with flaxseed meal mixed with water and use dairy-free yogurt.
