A light, moist cake with a tender crumb, made using yogurt as the key ingredient for richness and tang. This French-style yogurt cake is simple to prepare and endlessly adaptable with various flavors and toppings.

  • 1 cup plain yogurt (whole milk recommended)
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup vegetable oil (or melted butter)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional)
  • Optional Add-ins: 1 cup fresh berries, chocolate chips, or 2 tbsp poppy seeds

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or loaf pan.
  2. Mix Wet: In a large bowl, whisk yogurt, sugar, eggs, oil, and vanilla until smooth.
  3. Add Dry: Sift in flour, baking powder, baking soda, and salt. Gently fold until just combined.
  4. Flavor: Stir in lemon zest or other add-ins if using.
  5. Bake: Pour batter into prepared pan. Bake 40-45 minutes until golden and a toothpick comes out clean.
  6. Cool: Let cool in pan 10 minutes, then transfer to a wire rack.

  • Traditional Method: Use the yogurt container to measure all ingredients (1 yogurt = 1 cup)
  • Variations: Substitute ½ cup cocoa powder for flour for chocolate version
