Delightful Strawberry Thumbprint Cookies

  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup strawberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
  3. Add the vanilla extract until fully incorporated.
  4. Combine the flour and salt in a separate bowl, then gradually add to the butter mixture, mixing until just combined.
  5. Form the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, spaced 2 inches apart.
  6. Make an indentation in the center of each ball using your thumb or the back of a spoon.
  7. Fill each indentation with strawberry jam without overflowing.
  8. Bake for 12-15 minutes, until edges are lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
